VGStuffed Eggplant

Makes 4 sides or 2 mains

Prep: 20 minutes | Cook: 25 minutes | Servings: 2

Ingredients

  • 2 large eggplants
  • 500g impossible mince
  • 1 zucchini
  • Pinch of cumin, paprika, onion powder, and salt
  • Olive oil and brush

Instructions

  1. Slice the eggplant length-ways
  2. Scoop out the flesh. Chop and set aside
  3. Mix olive oil with onion powder and salt, and brush outside of eggplants
  4. Mix eggplant flesh with cumin and paprika
  5. Put eggplant shells into oven at 180°C
  6. Start frying impossible mince with onion powder
  7. Dice the zucchini
  8. Add the eggplant flesh mix to the pan, followed by the zucchini
  9. Add the mix to the cooking shells, and cook for another 15 minutes
